Apple Oatmeal Cookies

These apple cookies are very similar to the American style cookies in that they are moist, soft and crumbly. The oats give them a lovely texture that simply isn’t found with cookies that just use flour. They are also sweetened with honey which gives them a lovely, distinctive flavour. This recipe makes around 24 cookies, depending on how big you make them.
Ingredients List:
125g porridge oats
175g honey
110g butter
100g wholemeal flour
1 apple
1 tsp. baking powder
½ tsp. cinnamon
1 egg
1 tsp. vanilla extract
Directions:
1) Preheat the oven to 190C and grease two baking trays.
2) In a large bowl, beat together the butter, honey, egg and vanilla extract. Keep beating until you have a smooth mixture.
3) Peel, core and finely chop the apple.
4) Mix the flour, porridge oats, baking powder and cinnamon into the wet batter. Mix until smooth and then fold in the apple.
5) Drop dessertspoons of the mixture onto the baking trays and continue until you’ve used all the cookie batter.
6) Bake them for 10-15 minutes in the oven until brown round the edges and still soft in the middle.
7) Allow to cool completely.
